Hemp seed crusted protein enriched banana bread

I got super excited when Australia finally passed Hemp seeds as a source of food. So started creating yummy nutritious recipes using hemp seed and hemp protein.

Ingredients

3 organic ripe bananas

1/2 cup of hemp protein ( could also use pea protein)

1/4 cup of maple syrup (please use the real stuff from tree sap)

1/2 cup of coconut sugar

pinch of cinnamon

125g butter

2 organic free ranged eggs

1 1/2 cup of organic spelt flour

1 tablespoon organic baking powder

tsp of vanilla extract

1 handful of hemp seeds

splash of organic bon soy milk ( can also use almond of coconut)

you will also need a bread baking tray and some coconut oil spray to spray it with.

Oven at 180 fan force

Instructions

Step 1: Mash the banana in a bowel using a fork and add the cinnamon.

Step 2: In a sauce pan place the butter, sugar and maple and heat slowly being careful you don't burn it until butter has melted then stir to combine.

Step: 3: Add the butter mixture to the banana and mix through, then add the hemp protein, baking powder and flour and combine well.

Step 4: whisk the eggs and then add to the mixture stirring them through well.

step 5: Add the vanilla essence and soy milk and combine well.

Pour mixture into your well sprayed bread baking tray and sprinkle over the top some hemp seeds.

Then add this to the oven and cook for 20-30mins

my oven cooks really quickly so check with a knife to see if the bread is cooked through.
