Vegan Chili Dish

Serves around 4-5 people

It Meant to be Chilli but because I have a family of people who don't like spicy thing I had my chilli powder at the end. However if i made it just for me then use a fresh chilli during cooking.


1 Packet Quorn 500g mince or TVP ( I Haven't used TVP before so you will need to read how to cook it first).

1 Organic Corn cooked and then cut off the corn

1 Capsicum Diced

2 Garlic Cloves minced

Onion diced

Chilli powder for those adding it at the end or a fresh chilli for those adding it during cooking.

1 teaspoon Ground Coriander

1 teaspoon cumin seed

1 teaspoon Paprika

1 teaspoon of cinnamon

500ml Veggie stock

1 tablespoon of sweet soy sauce

1 tin of organic diced tomatoes

1 Expresso shot of fresh brewed coffee hot or cold

1 Tin of kidney beans

2 tablespoon of Dark chocolate chips

Salt and pepper

A dash of red wine 1/4 cup


1 Avocado

Cheese you can get a range of dairy free cheese these days

If your not vegan sour cream

How to make ?

Heat olive oil in a large sauce pan over medium heat and fry onion, mince, garlic for a few mins then added Capsicum and spices. Add in fresh chilli here if you want to make it hot.

Then stir in the tomatos, stock, soy sauce, wine and coffee and bring to a boil and simmer for 30 mins. stirring occasionally . If it start to dry out add more stock.

In the mean time bring a pot of water to the boil and cook the corn.

Wash canned beans under cold water

After 20 mins of simmering add beans, choc chips, corn, and cook for a remaining 10 mins. Add salt and pepper.

Serve and add chilli powder to the ones you want to have hot.

Add topping that you want.

Serve with a wrap of your choice
